After some health challenges last summer - hello diverticulitis - I decided to go completely plant-based cold turkey.  I was already dairy-free, so I was only really giving up meat and eggs (no big deal right?!).  Well, at the beginning of my plant-based journey I felt like the possibilities were endless and had a great variety going with breakfast and lunch.  However, dinner was a different story and I got bored pretty early on and was basically unsure of what to eat exactly.  Enter Purple Carrot

If you haven’t heard of Purple Carrot, it’s a meal delivery service focusing on healthy, plant-based meals.  They send you all the ingredients with step-by-step instructions on how to prepare a yummy plant-based dinner from the comfort of your own home.  You can choose from a variety of dinner plans that include high protein, quick and easy, and gluten-free and they are available in 2 or 4 servings - starting at just $9.99 per serving.

Being Celiac, I of course chose the gluten-free dinner options and I chatted with customer service to ensure their gluten-free options were safe for me (and I was highly impressed with their knowledge and responsiveness). One of my favorite meals was the buddha bowl (shown below).

I would definitely recommend Purple Carrot if you have just gone plant-based or even if you aren’t completely plant-based as it’s a great way to go meatless a few nights a week.  Every purple carrot meal saves over 200+ gallons of water vs. consuming a meal with animal protein.  This is huge and a great way to reduce your carbon footprint and help the environment.

.

For me, Purple Carrot took the guesswork out of researching or coming up with recipes a few nights during the week.  They also offer other meal options -  breakfast, lunch, and even snacks as well, with a great variety for everyone. .

I also have to mention that I cannot praise a plant-based diet enough!  I have so much energy and my bloodwork for the first time ever is perfect!  Not to mention, there is scientific evidence that many chronic diseases can be prevented, controlled, or even reversed with a whole-food, plant-based diet!  A plant-based diet can literally reduce the risk of type-2 diabetes, heart disease, certain types of cancer, and other major illnesses!  So I feel like I’m doing my part in my journey to become the healthiest version of myself

Do not let a whole-food plant-based diet intimidate you.  It really just is the following:

  • Vegetables: You can eat plenty of veggies including peppers, cucumbers, corn, all types of lettuce, peas, collards, etc.

  • Tubers: Root vegetables like potatoes, carrots, beets, parsnips, sweet potatoes, turnips, etc.

  • Fruits: Who doesn’t love fruit? If you’ve been avoiding fruit because of the sugar content - PLEASE DON’T! Fruit contains fiber, water, prebiotics, probiotics, vitamins, minerals and tons of nutrients. And who doesn’t love: Apples, oranges, bananas, strawberries, grapes, tomatoes and avocado (yes tomatoes and avocadoes are considered fruit)!

  • Whole grains: Grains, cereals, and other starches in their whole form, such as quinoa, brown rice, millet, whole wheat, oats, barley, etc. Even popcorn is a whole grain (yum!).

  • Legumes: Beans of any kind, plus lentils, pulses, etc.

There are tons of other foods you can also enjoy, including nuts, seeds, avocados, tofu, tempeh, whole-grain flours and breads, and plant-based milk.
