No Bake Chunky Monkey Bars

I have made these chunky monkey bars twice now in quarantine, so I have to share the recipe. ⁣

Last time I made them I had every intention of dropping off half on my Mom’s doorstep but they were so good I kept them all to myself (sorry Mom)! 🤪⁣⁣ ⁣⁣

These bars are super EASY and the perfect no bake dessert – gluten-free, vegan and made with real, simple ingredients which makes for a health(ier) dessert! Plus they are a wonderful way to get healthy carbs and fat in!⁣⁣

Ingredients⁣⁣
⁣⁣
For the bars: ⁣⁣
1 cup cashew butter⁣⁣
1/2 mashed ripe banana ⁣⁣
1/3 cup coconut flour⁣⁣
1/4 cup maple syrup⁣⁣
1 tbsp cinnamon (Ceylon is best)⁣⁣
1/4 cup chocolate chips (I love enjoy life)⁣⁣
3/4 tbsp of coarse sea salt (optional but I add since I love a salty/sweet combo)⁣⁣

Chocolate Layer: ⁣⁣
1 cup chocolate chips⁣⁣
3 tbsp cashew butter⁣⁣
⁣⁣
Instructions:⁣⁣
1.  In a bowl, mix together the bar ingredients. Then fold in the chocolate chips & mix together well. ⁣⁣
⁣⁣
2.  Line a brownie/cake pan with parchment paper and pour the batter into it. Then sprinkle coarse sea salt on top (optional). Then place in the fridge for 5-10 minutes to let it harden. ⁣⁣

3.  While the bars are in the fridge, make the chocolate layer. ⁣ In a small, microwave safe bowl - mix together the cup of chocolate chips and cashew butter and microwave until fully melted. ⁣⁣

4.  Take the bars out of the fridge, add the chocolate layer on top, smooth with a spatula, and add to the freezer until frozen (if you want them hard) or put in the fridge for softer bars.⁣⁣

5. Remove, slice, and enjoy. Makes 9 bars total.

{Macros based off ingredients I used were 36g Carbs, 28g Fat and 7g Protein for 1 serving.}
